Vegetable Boats

“Row, row, row, your (vegetable) boat.”

Boats don’t have to be sweet and fruity, you can make fantastic ones out of vegetables too!

These are delicious when filled with a dip. You can use shop bought dip, but if you want a tasty homemade one, there are two simple recipes you can follow here:

Guacamole
Yoghurt Dip

Cooking time: 10 minutes
Makes: Many, but depends how big you want them

What you need:

Ingredients:

  • Red/green/yellow peppers
  • Dip (homemade or shop bought fine)
  • Cheese slices (pineapple or vegan sliced cheese work well too)
  • Cucumbers (we like baby ones best for this recipe, but any will will work well)
  • Carrot

Equipment:

  • Sharp knife
  • Cocktail sticks
  • Spoon
  • Vegetable peeler (optional)

Method:

  1. Cut your cucumbers in half lengthways and deseed them using a spoon. Make sure you leave aside some extra cucumber for your sails! If using large cucumbers cut them into about 7cm (3 inch) pieces.
  2. Cut your pepper up to make the rest of your boat bases.
  3. Cut your cheese slices (or pineapple) into triangles for sails.
  4. Cut your carrot into matchstick shapes.
  5. Using the leftover cucumber for sails, make thin slices using a peeler or sharp knife.
  1. Stick a carrot matchstick into 2 ends of a cucumber slice. Repeat for all slices.
  2. Fill your cucumber and pepper boats with dip.
  3. Using cocktail sticks, stick your different sails into your boat dips.

    Your boats are now ready to set sail – into your tummy!
