Nutty Chocolate Banana No-Dairy Ice Cream

Tiikat came up with this healthy sugar and dairy free ice cream recipe when experimenting with different flavours. It doesn’t require an ice cream maker and is absolutely delicious, whilst also containing nutty and banana goodness!

 

Cooking time: 10 minutes preparing, freezing bananas minimum 3 hours or overnight

Difficulty:

1.5 wooden spoons +

Ingredients:

  • 3 bananas
  • Almond/Hazelnut/Coconut milk
  • Almond/Hazelnut/Peanut Butter
  • Cocoa powder
  • Cacao nibs or chocolate chips (optional)

Equipment:

  • Freezer
  • Blender or food processor
  • Knife
  • Chopping board
  • Freezer bag or pot

Method:

  1. Chop up your bananas.
  2. Place your bananas in a freezer bag or tub and freeze for 3 hours minimum or overnight.
  3. Add all your ingredients, except for the cacao nibs or chocolate chips (if using), to your blender or food processor.
  4. Blitz your ingredients. You will probably need to stop and stir in between. Add a dash of extra nut milk if needed.
  5. You should now have a lovely smooth ice cream consistency.
  6. If using cacao nibs or chocolate chips add them now and give it all a very quick pulse in your blender/food processor.
  7. Enjoy! If you want your ice cream a little more solid put it back in the freezer for 1-2 hours.

Try making this with different nut butters and milks, or adding new flavours like crystalised ginger or raisins. What is your favourite combination?
