Berry soups are popular in Finland and throughout Scandinavia. Tiikat likes to eat his on top of rice porridge, but it is equally delicious topped with a dollop of cream!
Cooking up some berry soup is always a good idea. Your kitchen should smell amazing while it boils. Thinking about it makes our mouth water already!
Hint: If you want to serve this with rice porridge it is a good idea to have them boiling next to each other at the same time.

Ingredients:
- 2 cups (500ml) apple juice
- 2-3 cups (500-750ml) fresh or frozen berries
- 2 cinnamon sticks and/or 2 whole cloves (optional)
- 1 tablespoon cornflour
- 1 teaspoon vanilla extract
- Whipped/sour/coconut cream for topping (optional)
Equipment:
- Saucepan
- Measuring cup or jug
- Wooden spoon
Method:
- Combine your cornflour with 3 tablespoons of apple juice. Stir until smooth.
- In a saucepan, combine the berries and the rest of your apple juice. Add the cinnamon and cloves if using. Bring to a boil.
- Once boiling, reduce the heat so that the soup slowly simmers for 10 minutes. Stir occasionally.
- Add the cornstarch mixture to the berry mixture. Cook and stir until the soup starts to thicken. Continue cooking and stirring for 2 minutes more.
- Remove from the heat, throw away the cinnamon sticks and cloves and stir in the vanilla.
- Spoon your soup into bowls and top with a dollop of cream if you wish.
Other suggestions:
Berry soup goes well with lots of things, not just rice pudding.
If you want to try something different, you could spoon some over some peanut butter toast for a delicious breakfast.
You could also serve a spoonful as a side for meatballs and mash or other savoury dishes. Why not experiment and see what it tastes good with?
